Great for Fall, Harvest, and Thanksgiving! Ingredients:
2 1/4 cups flour |
1 tablespoon pumpkin pie spice |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup dried cranberries |
2 eggs, beaten |
2 cups sugar |
1 3/4 cups canned pumpkin puree (15 oz can) |
1/2 cup vegetable oil |
1/2 cup pecans, chopped |
Directions:
1. Heat oven to 350 degrees. 2. Combine flour, spice, baking powder, and salt in a bowl and blend to mix well. 3. Combine eggs, sugar pumpkin, and oil in a seperate mixing bowl. 4. Gradually pour in dry ingredients and mix throughly. 5. Spoon into 2 greased 9x5x2 inch loaf pans. 6. Bake at 350 degrees for 55 minutes or until toothpick comes out clean. |
