A perfect weeknight meal if you prepare the few ingredients ahead and start the slow cooker before work. Make the easy gravy when you get home. 10 minutes Wonderful flavor combination, Steamed rice and vegetables makes it a complete meal with very little work or clean up time.
Ingredients:
2 1/2 - 3 lb boneless pork roast
16 oz can jellied cranberry sauce
1/2 c sugar
1/2 c cranberry juice
1 tsp dry mustard
1/4 t grnd cloves
2 t cornstarch
2 t cold water
salt to taste
Directions:
1. Place pork roast in slow cooker. In a medium bowl, mash cranberry sauce; stir in juice, sugar, mustard and cloves. Pour over roast. Cover & cook for 60-08 hours or until meat is tender
2. Remove roast and keep warm. Skim fat from juices, if any; discard
3. Add broth to 2 C measure, adding water if necessary
4. Bring to boil in saucepan over med-high heat.
5. Combine cornstarch and water, stir into broth Season with salt.
6. Serve over pork
7. 4 – 6 Servings
