It's moist and slightly sweet/tart. Grandma was an awesome baker. Ingredients:
3 cups flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
2 cups sugar |
1 teaspoon salt |
1 1/2 teaspoons vanilla |
1 1/2 cups cranberries (fresh or frozen) |
8 ounces crushed pineapple in juice |
1 cup salad oil |
2 eggs |
Directions:
1. Preheat oven to 350 degrees F. 2. In a large bowl, sift dry ingredients together. 3. Add vanilla, cranberries, pineapple, eggs, and salad oil. 4. Mix well. 5. Do not beat. 6. Pour mixture into a greased 10 inch tube pan (or 10 cup bundt pan). 7. Bake 1 hour or until done. 8. Cool and slice. |
