Use fresh cranberries for a healthy breakfast treat Ingredients:
1 c cranberries |
3 tb sugar (or splenda ) |
1 c flour |
1/2 c yellow cornmeal |
1 1/2 ts baking powder |
1/2 ts salt |
1 1/2 c milk |
1 large egg |
3 tb butter, melted |
2 tb pancake syrup |
Directions:
1. Chop cranberries and sugar in food processor. 2. Remove from processor. 3. add dry ingredients to precessor andmix well. 4. add milk, egg, butter and syrup and process a few times just to blend all. 5. dont overmix. 6. return cranberries to processor and pulse one or twice to 7. mix. 8. heat griddle or pan and brush with butter. 9. cook pancakes about a few minutes on each side or done 10. Serve with additional butter and syrup. |
