Scones and pancakes are my favorite foods. This is one of my favorite scone recipes. Ingredients:
2 cups flour |
1/2 cup sugar |
1/4 tsp salt |
2 tsp baking powder |
1 1/2 cup dried cranberries |
1 stick butter |
1 egg |
1/2 cup milk – minus 3 tablespoons |
egg wash |
1 egg |
1 tablespoon milk |
1 tablespoon orange extract (optional) |
Directions:
1. Whisk together flour, sugar, salt and baking powder in a bowl. Add cranberries and mix so they are evenly distributed. Add margarine in small cubes and mix with fingers or pastry blender until evenly blended. 2. Whisk together eggs and milk in a small bowl. Gradually stir into the flour mixture until dough forms. Work dough with hands if necessary, but do not overwork. 3. Drop scant 1/2 cup amounts of dough on ungreased baking sheets. 4. For egg wash, beat together egg, milk and orange extract in small bowl. Lightly brush each scone with wash. 5. Bake for 20-30 minutes or until lightly golden. Makes 8-10 scones. |
