A light and creamy pie for any celebration. Perfect for Thanksgiving and Christmas but also great at a cook-out or as a family dessert. It' slight sweet tart flavor is one to rave about. Ingredients:
1 1/2 cups graham cracker crumbs |
1/4 cup granulated sugar |
1/2 cup butter, melted |
1 1/2 cups water, boiling |
2-3 oz. boxes cranberry/raspberry gelatin |
1 cup water |
one 16 oz. can whole-berry cranberry sauce |
one 11 oz. can mandarin oranges, drained |
12 oz. cream cheese, softened |
1/2 cup powdered sugar |
one 16 oz. cool whip, thawed |
Directions:
1. In a medium bowl combine graham cracker crumbs, granulated sugar, melted butter. 2. Mix well, press firmly into bottom of pan. In a large bowl combine 3. boiling water, gelatin, stir until sugar is dissolved. 4. Add cranberry sauce to gelatin, stirring constantly until sauce is melted. 5. Add cold water, mix cranberry sauce well. 6. Place into refrigerator until slightly set up. 7. In meantime, beat softened cream cheese in large mixing bowl until smooth, add powdered sugar, beat until fluffy. 8. Fold in thawed cool whip. 9. Spread cream cheese mixture over top of crust. 10. Place into refrigerator 15 minutes to chill. 11. Remove slightly set gelatin from refrigerator, add drained oranges, 12. gently stir. 13. Slowly pour over top of cream cheese mixture. 14. Cover cranberry orange pie with plastic wrap, refrigerate for several hours before serving |
