2 cups biscuit mix |
1 cup milk |
2 eggs |
1 tablespoon sugar |
1/2 cup dried sweetened cranberries |
1/2 cup chopped pecans |
1 teaspoon orange zest |
butter |
Directions:
1. In a large bowl, combine biscuit baking mix, milk, eggs, and sugar. Stir in dried cranberries, pecans, and orange zest; mix until well combined. 2. Preheat a griddle or skillet over medium heat. Melt 1 tablespoon butter on griddle. Pour 1/4 cup batter per pancake onto hot griddle. Cook until pancakes begin to bubble and edges begin to set. Flip pancakes and cook 1 to 2 more minutes, or until golden, adding more butter as necessary. |
