Cranberry-Orange Nut Bread |

One of my mom's recipe. Ingredients:
2 cups flour |
1 cup sugar |
1 1/2 teaspoons baking powder |
1 teaspoon salt |
1/2 teaspoon baking soda |
1/4 cup butter |
1 teaspoon orange peel, grated |
3/4 cup orange juice |
1 egg, beaten |
1 cup cranberries, coarsely chopped |
1/2 cup nuts, chopped |
Directions:
1. Heat oven to 350°F Grease the bottom of a loaf pan. 2. In a large bowl, combine first 5 ingredients. Using a pastry blender, cut in butter until particles are the size of coarse meal. 3. Stir in orange peel, juice, and egg; just until dry ingredients are moistened. Fold in cranberries and nuts. 4. Pour into prepared pan. Bake for 50-60 minutes, or until toothpick comes out clean. 5. Cool 10 minutes, remove from pan and cool completely. |
