I took this recipe from the food section of our local newspaper years ago. It's a lovely moist muffin. Lots of flavor. Ingredients:
2 cups flour |
1 tablespoon baking powder |
2/3 cup sugar |
2 tablespoons sugar (for topping) |
1 tablespoon salt |
1 cup walnuts (tasted and chopped) |
1/3 cup vegetable oil |
2 large eggs |
1 1/2 cups oranges (diced-about 2 medium) |
1 cup frozen cranberries (thawed) |
Directions:
1. In a large bowl, combine flour, 2/3 cup sugar, baking power, salt and walnuts. 2. Mix well. 3. Whisk together oil and eggs until well blended. 4. Make a well in center of flour mixture. 5. Pour oil mixture along with oranges and cranberries. 6. Fold dry ingredinets into wet ingredients. 7. Mix until dry ingredients are just moistened. 8. Spoon into 12 greased muffin pans and sprinkle with remaining 2 TBSP sugar. 9. Bake 350F for 25-30 minutes. 10. Note: Toast walmuts for 8-10 minutes at 350F until golden). |
