I found this and thought I would post it since I didn't find anything similar here. I love the flavors of cranberry and orange so this bread was a big hit with me even though it is a fairly dense bread. Since I didn't have enough dried cranberries, I added some dried apricots and it turned out nicely. I made french toast out of it as well and it was great. The bread machine makes this super easy. Ingredients:
1 1/8 cups orange juice |
2 tablespoons oil |
2 tablespoons honey |
3 cups flour |
1 tablespoon powdered milk |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground allspice |
1 teaspoon salt |
2 1/4 teaspoons yeast |
1 tablespoon orange zest |
1 cup dried sweetened cranberries |
1/3 cup walnuts, chopped |
Directions:
1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. 2. If your machine has a fruit/nut signal, add the cranberries and nuts at the signal, or about 5 minutes before the kneading cycle has finished. 3. Use the Sweet or Normal setting. |
