I have not tried this recipe. I got this recipe from Ossg Recipes. This recipe is from The ADA Holiday cookbook. Diabetic exchanges 1 bar = 1 fruit, and 1/2 fat. Ingredients:
1 cup finely chopped cranberries |
2 oranges, ground skins and pulp |
1/2 cup raisins, dark or 1/2 cup golden raisin |
1/4 cup brown sugar |
1/3 cup margarine |
2 eggs |
1 teaspoon vanilla |
1 cup whole wheat flour |
1 cup unbleached white flour |
2 teaspoons baking powder |
Directions:
1. * substitutions = 2 cups whole fresh or frozen berries instead of 1 cup chopped. 2. ** substitutions = 2 T fructose instead of brown sugar 3. Combine the cranberriess, oranges, raisins and brown sugar in a mixing bowl. Set aside. Cream margarine until light and fluffy. Add 1 egg at a time and beat well. Blend in vanilla. Gradually add the flours and baking powder to the creamed mixture. Stir in the cranberry mixture and pour the batter into a greased 13-x-9-inch baking pan. 4. Bake in a 350 F oven for 30 to 40 minutes, or until browned on top. Cool in the pan on a wire rack. Cut into 24 bars. |
