We love cranberries. This is a delicious high protein muffin that freezes well. We are taking them with us on a trip, but they are great for that mid-morning or afternoon snack. Ingredients:
1 cup oatmeal |
1 cup flour |
1/4 cup quinoa, ground |
2 tablespoons wheat germ |
1/2 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 cup sour milk or 1 cup buttermilk |
1/3 cup oil |
1 egg, beaten |
1/4 cup sugar |
1/4 cup splenda granular |
1/2 cup cranberry sauce |
1/2 cup dried cranberries |
1/2 cup pecans |
Directions:
1. Mix all ingredients and fill greased muffin tins. 2. Bake 17 to 18 minutes at 400 degrees. |
