Toasted in the morning, this makes a great fast breakfast. A good way to start the day.
Ingredients:
wet ingredients
1 cup oatmeal
1 1/2 cup hot water
1/2 cup butter
1/2 cup brown sugar
3/4 cup granulated sugar
1/2 cup sour cream
zest from one orange
juice from one orange
1 egg
dry ingredients
2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups cranberries
3/4 cup chopped walnuts
Directions:
1. Heat oven to 350 degrees
2. Grease two 9x5 bread pans
3. Combine hot water and oatmeal and let sit for at least five minutes.
4. Cream sugar and butter
5. Combine all wet ingredients and blend well
6. Combine dry ingredients (except walnuts/cranberries) and mix with wet until barely wet
7. Fold in walnuts and cranberries
8. Bake for 60 minutes
