Cranberry-Oat White Surprise Cookies |

These are a low-fat, good-for-you cookie that you can eat for breakfast or feed to your kids without guilt! Ingredients:
2 cups oats (old-fashioned) |
1 cup all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon cinnamon |
1/4 teaspoon salt |
1 (15 1/2 ounce) can cannellini beans, rinsed and drained (white kidney beans) |
1/4 cup butter |
1 cup brown sugar |
1 large egg |
1 teaspoon vanilla |
1/2 cup white chocolate chips |
1/2 cup dried cranberries |
Directions:
1. Preheat oven to 350°F. 2. In the bowl of a food processor, pulse the oats until they resemble a coarse flour. Add the flour, baking soda, cinnamon and salt and process until combined. Transfer to a large bowl. 3. Put the beans, butter, brown sugar, egg and vanilla into the food processor and process until smooth. 4. Pour the bean mixture into the oat mixture and stir by hand until almost combined. Stir in the white chocolate chips and cranberries. 5. Drop Tablespoonfuls of dough onto a parchment lined (or non-stick sprayed) cookie sheet and then gently flatten each one with a water-dampened hand. 6. Bake for 14-16 minutes or til golden on the edges and soft in the middle. Transfer to a wire rack to cool. |
