Ingredients:
2 cups all-purpose flour, sifted |
1 cup sugar |
1 1/2 teaspoons baking powder |
1 teaspoon salt |
1/2 teaspoon baking soda |
1/4 cup butter or 1/4 cup margarine |
1 egg, beaten |
1 teaspoon orange rind, grated |
3/4 cup orange juice |
1 1/2 cups fresh cranberries, chopped |
1/2 cup walnuts, chopped |
Directions:
1. Sift flour, sugar, baking powder, salt and baking soda in a large bowl. 2. Cut in butter until mixture is crumbly. 3. Add egg,orange peel and orange juice all at once; stir just until mixture is evenly moist. 4. Fold in cranberries and walnuts. 5. Spoon into a 9 x 5 x 3 inch loaf pan. 6. Bake at 350 degrees for 1 hour and 10 minutes or until toothpick inserted comes out clean. 7. Remove from pan and cool on wire rack. |
