Rolling goat cheese in dried cranberries and pecans makes a festive hors d’oeuvre. Serve with crackers and a glass of port. Make ahead tip:: Wrap tightly in plastic wrap and refrigerate for up to 3 days. Easy, quick, tasty and pretty Ingredients:
1/4 cup dried cranberries, finely chopped |
tablespoons finely chopped pecans |
pinch of salt |
1 4-ounce log soft goat cheese |
Directions:
1. Lay a piece of plastic wrap on a work surface. 2. Combine cranberries, pecans and salt in a small bowl. 3. Dump the mix onto the plastic wrap and form it into a small rectangle on the plastic wrap. 4. Roll goat cheese in the cranberry mixture to completely coat. |
