These delicious muffins are loaded with cranberries & sprinkled with parmesan cheese to enhance the flavor Ingredients:
2 cups all-purpose flour |
2 tsp baking powder |
1/2 tsp salt |
3 tblspn super fine sugar |
4 tblspn butter - melted |
2 eggs - beaten |
3/4 cup milk |
1 cup fresh or frozen cranberries - if frozen, thaw before using |
2 tblspn freshly grated parmesan cheese - if prefered can replace the cheese with raw crystal sugar |
Directions:
1. Pre-heat oven to 400 degrees 2. Lightly grease 2 muffin pans 3. Sift together the flour, baking powder & salt into a mixing bowl 4. In a separate bowl, mix the butter, eggs & milk 5. Add to dry ingredients & mix lightly together until all the ingredients are evenly combined 6. Stir in the cranberries 7. Divide the mixture between the prepared pans 8. Sprinkle each muffin with the grated cheese or raw crystal sugar 9. Bake for about 20 mins, until the muffins a well risen & golden brown 10. Let cool in pans for a few mins & then transfer to wire racks to cool |
