Ingredients:
1 cup cranberries, cut in half |
1/4 cup sugar |
2 cups unbleached flour |
1/4 cup sugar |
3 teaspoons baking powder |
1 egg |
3/4 cup skim milk |
1/4 cup melted margarine |
Directions:
1. Mix halved cranberries and 1/4 cup sugar. 2. Let sit while assembling other ingredients. 3. In bowl, combine egg, skim milk and melted margarine. 4. In separate bowl, stir together flour, 1/4 cup sugar, and baking powder. 5. Add to wet ingredients. 6. Add cranberry mixture. 7. Bake in sprayed muffin tin in 400 degree oven for 25 minutes. |
