Cranberry Loaf With A Hiccup |

This recipe came from a friend of mine in Quebec. She makes it around Christmas time and says it's always well received. Le Cheval Blanc(The White Horse) makes a cranberry beer for Christmas, called Le Snoreau. Ingredients:
2-1/3 cups / (580 ml) all-purpose flour |
2 teaspoons / (10 ml) baking powder |
1/2 teaspoon / (2 ml) salt |
1/3 cup / (80 ml) sweet butter, softened |
2/3 cup / (160 ml) sugar |
2 large eggs |
1/2 cup / (125 ml) le snoreau(cranberry flavoured beer) |
(if you can't find cranberry flavoured beer then a fruity beer will do) |
2/3 cup / (160 ml) marmalade or apricot preserves/jam |
1 cup / (250 ml) fresh cranberries |
note: i have used frozen cranberries and they work well. |
Directions:
1. Preheat the oven to 375 degrees F. 2. Sift together the flour, baking powder, and salt. 3. In a separate bowl using an electric mixer, cream the butter and sugar. 4. Beat in the eggs one at a time. 5. Mix in the beer. 6. Blend the marmalade / apricot jam with a spatula or wooden spoon. 7. Add the flour mixture and blend together. 8. Add the cranberries last. 9. Butter and flour a 9 inch loaf pan. 10. Pour the mixture in and bake for approximately 1 hour, or until a cake tester comes out clean. 11. Cool the loaf for about 10 minutes, then turn onto a rack to cool completely. |
