Cranberry Glazed Sweet Potatoes |

Ingredients:
3 pound(s) sweet potatoes peeled and cut in 1 inch cubes (approx 6 potatoes) |
1/2 cup(s) packed brown sugar |
2 tablespoon(s) stick butter or margarine |
2 tablespoon(s) fresh orange juice |
1/2 teaspoon(s) salt |
1 cup(s) whole berry cranberry sauce or cran-fruit |
strip(s) orange rind , optional |
Directions:
1. Place sweet potatoes in 2 quart casserole. Cover with plastic wrap. Microwave on HIGH 10 to 12 minutes or until tender. 2. Combine sugar, margarine, orange juice and salt in 2 cup measure. Microwave at HIGH 2 to 3 minutes, stirring after each minute. 3. Add sugar mixture and cranberry sauce tosweet potatoes; toss gently. Microwave at HIGH for 10 minutes or until thoroughly heated, basting with sauce every 4 minutes. Garnish with orange rind, if desired |
