Cranberry Gingerbread Muffins |

These are delicious and healthy, and fun for this season. Ingredients:
1 cup all bran cereal |
3/4 cup whole wheat flour |
3/4 cup white or rye flour (i use rye) |
1/3 cup brown sugar |
1 tsp cinnamon |
1/2 tsp all spice |
1 1/2 tsp baking powder |
1/2 tsp baking soda |
1 egg |
1 cup plain low fat yogurt or buttermilk |
1/4 cup vegetable oil |
1/4 cup molasses |
1 1/4 cup fresh or frozen cranberries |
Directions:
1. Heat over to 375 degrees celcius 2. In a large bowl, mix together dry ingredients, including sugar. 3. In a medium size bowl mix all other ingredients except cranberries. 4. Add wet ingredients to dry and mix. 5. Add cranberries. 6. Bake in greased muffin cups for 20-25 minutes. 7. Your house is gonna smell great! |
