I haven't tried it but will, possibly at Christmas time. Looks delicious. Ingredients:
2 cups fresh cranberries |
1 cup sugar |
2 cups heavy cream |
1 tbsp sambuca |
Directions:
1. In a heavy saucepan, cook cranberries and sugar, uncovered over med-low heat for 20-25 minutes or until a thick syrup has formed. Stir occasionally, lightly crushing the berries against the pan with the back of the spoon. 2. Remove from the heat and transfer to a med-sized bowl. 3. Cool to room temperature. 4. Cover with plastic wrap and refrigerate for 2 hours. 5. In a large bowl, whip the cream and sambuca until stiff peaks form. Fold in cranberry mixture. Cover and tightly wrap with plastic wrap and refrigerate a few hours |
