This is a frozen cranberry dessert with a graham cracker crust. Easy and delicious. I use reduced fat Cool Whip and graham crackers do not notice a difference compared to full fat. Ingredients:
1 1/2 cups graham cracker crumbs |
1/2 cup pecans, chopped |
1/4 cup sugar |
4 tablespoons unsalted butter, melted |
2 cups cranberries |
1 cup sugar |
2 egg whites |
1 tablespoon frozen orange juice concentrate |
1 teaspoon vanilla |
2 cups cool whip lite |
Directions:
1. Mix crumbs, pecans and melted butter and spread into bottom and sides of 13x9 pan. 2. In food processor fitted with metal blade, chop cranberries and sugar until berries are coarsely chopped. Let sit for 5 minutes. 3. Add egg whites, orange juice and vanilla, mix until frothy. 4. Fold in Cool Whip. 5. Spread mixture into crust and freeze. |
