Cranberry Croquettes (Or Fritters) |

This is very interesting and quite good. If you are looking for a new way to try out this years crop of cranberries give it a try. Ingredients:
1 cup flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 egg |
2 tablespoons milk |
1/2 tablespoon lemon juice |
2 teaspoons orange zest |
3/4 cup grated cranberries, cooked in simple syrup and drained save syrup |
1 cup water |
3/4 cup sugar |
Directions:
1. Mix all dry ingrediants. 2. beat egg and milk well. 3. Add to dry mix. 4. Add berries and lemon juice. 5. Drop by spoonfulls into1/2 inch hot oil, flatten and fry until crispy on both sides. 6. Drain on paper towels sprinle with powdered sugar. 7. Serve with warm syrup from cooking the berries. |
