This is a sweet cake-like corn bread. Whole blueberries-coated in flour-can be used in place of the cranberries. Ingredients:
1/2 cup butter, softened |
1 cup sugar |
2 eggs |
1 1/2 cups all-purpose flour |
1 cup cornmeal |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 1/2 cups buttermilk |
1 cup cranberries, halved |
Directions:
1. In a mixing bowl, cream butter and sugar. 2. Add eggs; mix well. 3. Combine the flour, cornmeal, baking powder and salt. 4. Add to creamed mixture alternately with buttermilk. 5. Fold in cranberries. 6. Transfer to a greased 9-in. square baking pan. 7. Bake at 375 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean. 8. Serve warm. |
