Such a delicious coffee cake - so fantastic with your morning coffee - Ingredients:
1/2 cup margarine |
1 cup white sugar |
2 eggs |
2 cups flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup plain yogurt or 1 cup sour cream |
1 teaspoon almond extract |
1 (398 ml) can whole cranberry sauce, pureed |
1/2 cup walnuts, chopped |
3/4 cup icing sugar |
1 tablespoon hot water |
1/2 teaspoon almond extract |
Directions:
1. Cream margarine, sugar and eggs. 2. Sift dry ingredients. Mix alternately into creamed ingredients the dry ingredients and yogurt. Add almond extract; beat well. 3. Spread 1/2 batter in well-greased tube pan. Spread cranberry sauce on top. Spread the rest of the batter, then the remaining cranberry sauce. Sprinkle with walnuts. 4. Bake in 350F oven for 1 hour. Cool in pan. Run knife around edge: Remove from pan. 5. Pour glaze over cake. |
