Cranberry Coconut Fruit Balls |

This is a wonderful treat. It can be classified as a dessert, a candy or just a great appetizer. I love them and always eat way too many when I make them. Hope you enjoy them as much as I do. Ingredients:
12 ounces dried apricots |
1-1/2 cups pecans |
2 cups fresh cranberries rinsed and drained |
grated orange peel from 1 orange |
1/4 cup butter |
1 pound confectioners' sugar |
13-1/2 ounces graham cracker crumbs |
7 ounces coconut flakes |
Directions:
1. Coarsely grind apricots with pecans and cranberries. 2. Stir in rind, butter, sugar and crumbs then wrap and chill for 2 hours. 3. Shape mixture into 3/4 inch balls. 4. Roll balls in coconut. 5. Store in refrigerator until ready to serve. |
