Heavenly as a side dish/relish at Thanksgiving or any winter dinner. Keeps very well. Serve with poultry or pork. Cooking time does not include 8 hours or more to chill. Ingredients:
1/2 cup raisins |
1/2 cup sugar |
3/4 cup dark brown sugar |
1/4 cup grated orange zest |
3/4 cup apple cider vinegar |
1 small onion, thinly sliced |
2 apples, peeled and finely chopped |
1/2 teaspoon salt |
1 teaspoon ground ginger |
1/2 teaspoon mace |
1 cup water |
1/2 teaspoon curry powder |
4 cups fresh cranberries |
3/4 cup orange juice |
Directions:
1. Combine first 4 ingredients in a saucepan. Bring to boil. Reduce heat and simmer, stirring occasionally, 30 minutes. 2. Stir in vinegar and next 6 ingredients. Return to boil. Reduce heat and simmer, stirring occasionally, 30 minutes. 3. Stir in cranberries and remaining ingredients; simmer, stirring occasionally, 10 minutes. Cool. Chill 8 hours or overnight. |
