Cranberry Chicken With Wild Rice |

Tender chicken is baked in a sweet tart cranberry sauce for this easy to prepare entree. Ingredients:
6 boneless skinless, chicken breast halves (about 4 ounces each) |
1 1/2 cups hot water |
1 (6 1/4 ounce) package fast- cooking long grain and wild rice blend |
1 (16 ounce) can whole berry cranberry sauce |
1 tablespoon lemon juice |
1 tablespoon reduced sodium soy sauce |
1 tablespoon worcestershire sauce |
Directions:
1. Place the chicken into a 13x9 inch baking dish coated with cooking spray. 2. In a small bowl, combine the water, and rice mix with the contents of seasoning packet, and pour around chicken. 3. In a small bowl, combine the cranberry sauce, lemon juice, soy sauce, and worcestershire sauce, and pour over the chicken. 4. Cover, and bake at 350 degrees for 40-50 minutes or until a meat thermometer reaches 170 degrees. |
