This is a simple, easy and flavorful Chicken Salad ready in minutes. The dried cranberry adds great color and flavor. Ingredients:
3 cups chopped, cooked chicken . |
1 stalk celery, chopped |
1/4 cup onion, chopped. |
1/2 cup craisins |
1 tablespoon lemon juice |
1/2 cup hellman's mayonaise |
1/4 teaspoon ground black pepper |
1/2 cup blanched slivered almonds |
tomato and lettuce |
fresh bread or rolls. |
Directions:
1. Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily. 2. In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, Craisins, onions and celery. 3. Chill for 30 minutes. 4. Serve with tomato and lettuce. |
