Cranberry Chicken

Ingredients:
1 tablespoon olive oil
4 skinless chicken breasts or 4 skinless chicken thighs (if using boneless meat, reduce cooking time.)
salt and pepper
1/2 white wine
1/2 cup frozen cranberry juice concentrate
1/2 cup dried cranberries
Directions:
1. Warm platter in 250° oven.
2. In non-stick skillet,cook chicken in olive oil until done.
3. (Do not overcook) Add salt and pepper.
4. Place on warmed platter, replace into oven.
5. In same skillet, place wine, cranberry juice concentrate and dried cranberries.
6. Boil on medium-high heat until liquids are reduce to half (about 5 minutes).
7. Dip each piece of chicken into the sauce and return to platter.
8. Pour remaining sauce over the chicken and serve.
