This is chicken breast (or legs) simmered in a homemade cranberry apple sauce. It is extraordinary! Ingredients:
2 chicken breasts |
1 1/2 cups dried cranberries |
1 1/2 cups apple juice |
2 tablespoons sugar |
1 pinch ground sage |
1 pinch ground pepper |
1 tablespoon cornflour |
Directions:
1. Sauce. 2. Chopped the dried cranberries until they are about half the size they were. Place cut cranberries in a bowl. Add the sage and the pepper. Add 2 tbsp of sugar. Mix ingredients until cranberries are coated with the sugar. In a small pan, heat 1 1/2 cups of apple juice. When warmed (not yet boiling) add the cranberries. Put 1 tbsp of corn flour and a little bit of water in a cup. Stir the corn flour until it is mixed with the water then add to the sauce (if you don't mix like this the sauce will go lumpy). Let boil until thick. 3. Chicken. 4. Put a 1/2 cup of water in a frying pan. Add the chicken and let the chicken cook on a medium heat until a little over half the water is gone. 5. Add the sauce to the chicken and leave on a medium heat until done. |
