Cranberry & Caramelized Onion Stuffing

A turkey stuffing that is just a bit different!
Ingredients:
6 tablespoons butter (divided)
3 large onions, sliced thin wedges
1 1/2 teaspoons sugar
1/4 cup water
1 1/2 cups celery, sliced
2 teaspoons dried thyme leaves
170 g craisins
2 (170 g) packages stove top stuffing mix (for turkey, chicken or pork)
2 cups hot water
Directions:
1. Preheat oven to 350°F.
2. Melt 3 tbsp butter in large saucepan or Dutch oven over medium high heat. Add onions & sugar. Cook & stir for 5 minutes or until onions are well browned. Reduce heat to low. Add 1/4 cup water to pan and cook, stirring often, for 10 minutes or until liquid has evaporated and onions are tender. Remove from pan.
3. Melt remaining butter in same pan. Cook celery and thyme for 5 minutes or until celery is tender. Remove pan from heat.
4. Add caramelized onions, Craisins, pouches of stuffing crumbs and seasoning packets. Stir in 2 cups hot water.
5. Spoon into 2-quart casserole dish.
6. Cover and bake for 40 minutes or until heated through. Makes about 8 cups.
