Cranberry Cake With Cream Cheese Icing |

This is more like a square than a cake really as it doesn't bake up very high, but it gets rave reviews every time I make it! Ingredients:
2 cups fresh cranberries |
2 eggs |
1/2 cup margarine |
1 teaspoon vanilla |
1 1/4 cups sugar |
1 1/2 cups flour |
1/2 teaspoon salt |
3 ounces cream cheese, softened |
2 cups icing sugar |
1/2 cup margarine |
1 teaspoon milk |
1 teaspoon vanilla |
Directions:
1. For the cake: Mix together the eggs, margarine and vanilla. 2. Add in all the dry ingredients and mix until combined. 3. Spread in a 9x13 greased baking pan and bake at 350 degrees until golden and toothpick comes out clean (about 25-30 mins). 4. For the icing: Cream together ingredients until smooth and spread over cooled cake. |
