A great recipe to use up that extra cranberry sauce! My family loves this recipe (which I've revised from a recipe from the cranberry museum) Ingredients:
1 1/2 cups flour |
1 teaspoon baking powder |
2 cups sugar substitute |
1/2 cup butter, melted |
1/2 cup applesauce |
1 cup cocoa |
4 eggs, lightly beaten |
1 1/2 teaspoons vanilla extract |
1 teaspoon almond extract |
1 cup whole berry cranberry sauce |
Directions:
1. Preheat oven to 350F and grease a 9x13 baking dish. 2. Combine flour, baking powder and sugar; set aside. 3. Mix butter, applesauce, cocoa, eggs, and both extracts until well blended. 4. Add chocolate mixture into the dry ingredients, stir well. Add cranberry sauce and stir just until combined. 5. Pour batter into the prepared baking dish, and bake for about 35 minutes. |
