This colorful, delicatey flavored salad has soft bites of brie, tangy dried cranberries and crunchy croutons and would be terrific as an appetizer for any meal. Ingredients:
1/2 cup dried cranberries |
1/4 cup port wine |
4 ounces brie cheese, chopped |
1 head butter lettuce (cut or torn, about 1 1/4 cups) |
2/3 cup seasoned croutons |
2 tablespoons olive oil |
2 tablespoons cranberry juice cocktail |
1 tablespoon basil pesto |
1 tablespoon red wine vinegar |
Directions:
1. Into a small bowl, measure cranberries and port. Let stand for 1 hour, stirring occasionally. Drain. Discard port. 2. In a large bowl, place cranberries, cheese, lettuce and croutons. Toss. 3. CRANBERRY DRESSING: In a jar with a tight-fitting lid, combine oil, juice, pesto and vinegar. Shake well. Makes 1/3 cup dressing. 4. Drizzle dressing over lettuce mixture. Toss. |
