A friend gave me this recipe 30 years or so ago. It has just the right amount of tartness from the cranberries and smells so good while baking. It's great to give as gifts to friends during the holidays Ingredients:
1 cup raw cranberries, washed, picked over, and cut in half |
1 cup chopped nuts (i like pecans) |
1 orange, rind of, grated |
1/2 cup orange juice |
2 cups flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
1 cup sugar |
1 egg, beaten |
2 tablespoons hot water |
2 tablespoons butter, melted |
Directions:
1. Mix flour, baking powder, baking soda, salt, cinnamon, and sugar thoroughly. 2. Combine orange juice, rind, water,and butter. 3. Blend wet ingredients into dry ingredients. 4. Add beaten egg. 5. Add cranberries and nuts. 6. Mix enough to moisten. 7. Bake in well-greased loaf pan about 1 hour at 350°F. 8. Check after 50 minutes. |
