If you like blue cheese you will love this little appetizer. Ingredients:
24 1/4-inch thick slices of french bread, each slice about the size of a business card |
2 t. walnut oil |
1/2 c. finely chopped walnuts |
8 oz. blue cheese, crumbled |
4 t. minced shallots |
1/3 c. dried cranberries |
Directions:
1. Place walnuts in dry nonstick sauté pan over medium heat, stirring occasionally, until toasted brown (about 6 minutes). 2. Preheat oven to 400 degrees. Arrange bread slices on baking sheet. Brush slices with walnut oil. Bake about 5 minutes or until crisp. 3. Mix toasted walnuts, blue cheese, shallots and cranberries. Spread mixture on toast slices. Bake just until cheese melts, about 4 minutes. Serve warm from the oven. Good with a nice Zinfandel-Sapphire Hill is an excellent match. |
