Cranberry Bars With Cream Cheese Frosting |

These bars are incredible. They are so rich with a shortbread like taste and the yummy cream cheese frosting on top. Even if you are not a big cranberry fan you will like these! A co-worker brought these to work and I kept sneaking more througout the day. I love them chilled. They are good anytime of year, but I especially love to make them in the fall and at Christmas. Ingredients:
2 eggs, well beaten |
1 1/4 cups sugar |
1/2 cup butter or 1/2 cup butter flavor crisco |
1 1/2 cups flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
2 cups fresh cranberries |
1 teaspoon vanilla |
frosting |
3 ounces cream cheese, softened |
1/2 cup butter or 1/2 cup margarine |
1 teaspoon milk |
1 teaspoon vanilla |
2 cups powdered sugar |
Directions:
1. Cream sugar and butter, add eggs. 2. Add the rest of the ingredients, batter will be very stiff. 3. Spread in a greased 13x9 pan. 4. Bake 40 to 45 minutes at 350 (325 if using a glass pan). 5. Spread frosting on when cool. 6. They are really good chilled before serving. |
