this sounded good to me and i had left over bananas and cranberries in the freezer its moist and suprisingly good. Ingredients:
1/4 cup butter or margarine, melted |
1 cup granulated sugar |
2 eggs |
2 or 3 (3/4 cup) mashed, ripe bananas |
1 cup chopped cranberries, fresh or frozen 1 tbls spoon orange zest |
1 1/2 cup all purpose flour 1-1/2 cup all purpose flour |
1 1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
nuts optional but walnuts are great in there also. |
Directions:
1. combine butter, sugar and 1 egg in mixing bowl. Beat until smooth. Beat in second egg. Stir in banana and cranberries and orange zest .nuts at this point if you want them. . In separate bowl, combine flour, baking powder, soda, salt and cinnamon. Stir well. Add all at once to banana mixture. Stir only to moisten. Scrape into greased 9 x 5 inch loaf pan. Bake in 350 degree oven for 1 hour or until it tests done. Let stand 10 minutes. Remove from pan and place on cake rack to cool. Wrap. watch your oven test it with a tooth pick at about 40 min. can get over done and dry. |
