Cranberry Apple Puff Pancake |

I love puffy pancakes with warm maple syrup! Tis' the season for Cranberries here in New England! Great with a morning cup of Coffee! Enjoy this recipe! :) Ingredients:
# 1 cup milk |
# 4 large eggs |
# 1 teaspoon vanilla |
# 2 tablespoons butter or margarine |
# 1/2 cup flour |
# 1/2 teaspoon baking powder |
# dash salt |
# 1 tablespoon sugar |
# 1/8 teaspoon fresh ground nutmeg |
# 1/2 cup sugar |
# 1/2 teaspoon cinnamon |
# 1/8 teaspoon fresh ground nutmeg |
# 3 tablespoons unsalted butter |
# 1/2 cup fresh or frozen cranberries |
# 1 apple (granny smith is great) |
Directions:
1. Preheat oven to 425 degrees. 2. Mix first 4 ingredients and then add next 5 ingredients and mix well. 3. Let stand for about 10 or 15 minutes. 4. In a separate bowl mix 1/2 cup of sugar, 1/2 teaspoon cinnamon and 1/8 teaspoon of nutmeg. 5. Put off to the side. 6. Peal and slice apple. 7. In oven proof skillet or cast iron, melt 3 tablespoons of unsalted butter sprinkle 1/2 of sugar mixture over butter. 8. Spread evenly sliced apples and cranberries cook for 5-10 minutes. 9. Add batter to skillet and place in oven for 15 min. then *reduce heat to 375 degrees* and cook for 10 minutes. 10. Pancake is done when it gets really puffy. 11. Serve with Maple Syrup or as a real treat, a scoop of ice cream. Oh so very Yummy... Enjoy! |
