Apple season is upon us once again and fresh cranberries will be plentiful as well. This combination sounded good to me. I found this recipe in an old Cape Cod cookbook. Ingredients:
4 to 5 cups apples, sliced |
1 cup fresh cranberries |
1/2 cup raisins |
1 to 2 tbsp lemon juice |
3/4 cup sugar or more, to taste |
2 tbsp flour |
1/2 tsp salt |
2 tbsp butter |
pastry for 2 crust pie |
Directions:
1. Combine apples, cranberries and raisins and sprinkle with lemon juice. 2. Combine flour, sugar and salt and toss with apple mixture. 3. Put filling in an unbaked pie shell and dot with butter. 4. Top with pastry crust. 5. Prick with fork to make steam vents. 6. Brush crust with milk. 7. Sprinkle with sugar, if desired. 8. Bake 45 minutes or until crust is golden brown at 375 degrees. |
