Quinoa with dried cranberries and edamame. Good as a side dish or as a light dinner. Ingredients:
1/2 cup quinoa |
1 cup water |
1/3 cup dried cranberries |
1/2 cup edamame |
2 tbsp lemon juice |
Directions:
1. Simmer quinoa in water until water has been absorbed (about 15 minutes). 2. Cook edamame in boiling water until it is al dente. 3. Put all ingredients in a bowl and mix. |
