Cranberry and Dried Cherry Relish |

So good — and no cooking required. Prepare the relish at least a day ahead, and add more cardamom before serving if you'd like a stronger flavor. From Bon Appetit, November 2001. Ingredients:
1 (12 ounce) package fresh cranberries |
1 cup dried tart cherry (about 5 ounces) |
1 cup packed golden brown sugar |
1/2 teaspoon ground cardamom |
Directions:
1. Mix all ingredients in large bowl. 2. Place half of mixture in processor. 3. Using on/off turns, process until coarsely chopped. 4. Transfer to medium bowl. 5. Repeat with remaining ingredients. 6. Chill at least 1 day and up to 2 days, stirring occasionally. 7. Makes 2 cups. |
