Cranberry-and-Citrus Glazed Pork Roast |

Ingredients:
1/4 teaspoon(s) salt |
1/4 teaspoon(s) pepper |
1/4 teaspoon(s) ground sage |
2 cloves garlic, minced |
1 2-1/2- to 3- lb. boneless pork top loin roast |
1 can(s) (16 oz.) whole cranberry sauce |
1/2 teaspoon(s) finely shredded orange peel |
1/3 cup(s) orange juice |
1/4 teaspoon(s) ground sage |
Directions:
1. In a small bowl, combine salt, pepper, 1/4 tsp. sage and minced garlic; rub over all sides of pork roast. Place roast on rack in a shallow roasting pan. Roast, uncovered, in a 325 degrees F. oven for 1 hour. 2. For sauce, in a saucepan, combine cranberry sauce, orange peel, orange juice, and 1/4 teaspoon sage. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes for until mixture has thickened slightly. Spoon about 1/4 cup sauce over pork. Roast meat, uncovered, 30 to 45 minutes more or until meat thermometer inserted in center of roast registers 155 degrees F. Remove from oven. Cover loosely with foil; let stand 15 minutes. (The temperature of the meat will rise 5 degrees F. during standing. Serve remaining sauce with meat. |
