Another family Thanksgiving favorite. Aunt Anna made this maybe 30 years ago for the first time. I jazzed her recipe up with the orange for a little refreshing zip. Yum!
Ingredients:
1 pound cranberries, fresh
1/2 cup sugar
1 can coconut
3 oranges, grated rind and sectioned like a grapefruit
1/2 cup pecans, chopped
2 cups miniature marshmallows
8 ounces cool whip
Directions:
1. Mix sugar with cranberries and chopp in food processor; let sit for an hour. Mix in rest of ingredients and refrigerate. Serve on lettuce leaves.
