Cranberry Almond Vinaigrette

The idea came from my love for Post Almond and Cranberry Cereal - I thought it was a great flavor combo. I like this over a mixed green salad, potato salad (it works) and even grilled salmon or warm roast turkey breast and glazed ham steaks at Christmas. Read more . I love the colour of this dressing - whatever it touches looks so pretty.
Ingredients:
1/2 cup unsweetened cranberry juice
1/3 cup light flavoured oil (so as not to drown the cranberry flavor)
1 tbs lemon juice
1 level tbs finely chopped dried cranberries
1 level tbs finely chopped shallots
1 level tbs finely chopped parsley
2 level tsp finely ground toasted almonds
1/2 tsp hot chili or red pepper flakes
1/2 level tsp garlic powder
2 level tsp salt (or to taste)
3 level tsp sugar (or to taste)
Directions:
1. Combine all ingredients in a screw top jar and shake vigorously till salt and sugar are completely dissolved.
2. Use as you would any salad dressing
