From TOH - My dd and ds made this recipe for my birthday dinner several years ago and has become a family favorite. A must for Thanksgiving dinner! We use either Butternut or Acorn squash for this dish. The combination of cranberries, almonds and squash is amazing! Ingredients:
4 cups squash, cooked and mashed |
4 tablespoons butter, divided |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground allspice |
1/4 teaspoon ground nutmeg |
1 (16 ounce) can whole berry cranberry sauce |
1/2 cup sliced almonds |
1/4 cup brown sugar, packed |
Directions:
1. Combine squash, 2 T butter, salt and spices. 2. Place in 2 quart buttered baking dish. 3. Stir cranberries and spoon over squash. 4. Combine almonds, brown sugar and butter. 5. Sprinkle over cranberries. 6. Bake uncovered 350 for 1 hour or until browned and bubbly. |
