From Asparagus to Zucchini, A guide to Cooking Farm Fresh Seasonal Produce. Ingredients:
1/2 cup raw fresh cranberries |
1 small apple, peeled cored and chopped in small pieces |
1/4 cup currants |
1/2 cup orange juice |
1 1/2 tablespoons honey |
1 tablespoon melted butter |
1 pinch salt |
2 acorn squash, cut in half and seeds removed |
Directions:
1. Heat oven to 350. Combine cranberries, apples, currants, orange juice, honey, butter and salt in a saucepan. 2. Heat until the berries are just tender. 3. Place squash in an ovenproof dish. Fill cavities with fruit. 4. Cover and bake until squash is tender, about 35-45 minutes. |
