Cran-Raspberry Streusel Bars |

Try this on your next cookie platter. Recipe courtesy Linda Tebben and Sunset Magazine Dec. 2007. Ingredients:
1 cup butter, softened and cut into bits |
2 cups flour |
2/3 cup rolled oats |
1/2 cup sugar |
2 egg yolks |
2/3 cup raspberry preserves |
1/3 cup dried cranberries |
1/3 cup unsalted mixed nuts (chopped) |
1/3 cup chocolate chips |
2 ounces white chocolate, melted |
Directions:
1. Preheat oven to 350°. 2. Butter a 7- by 11-in. pan. 3. In a food processor, whirl flour, oats, and sugar 10 seconds. 4. Add 1 cup butter; whirl until mixture forms a ball. 5. Set aside 1/2 cup of mixture. 6. Whirl in yolks. 7. Press yolk mixture into pan. 8. Spread with preserves. 9. Sprinkle on cranberries, nuts, and chocolate chips, then press into dough. 10. Form pea-size crumbs with reserved dough mixture; sprinkle over top. 11. Bake at 350° until topping is pale gold, 45 minutes. 12. Cool on a rack; drizzle with melted white chocolate. 13. Cut into 24 bars. |
